Let me tell you some amazing facts about Biryani. There are so many adaptations to this rice dish across India. Every state/region have their own twist and a flavour to it.

Weekends are ideal to enjoy Biryani. It's common for people to think-- Can we really enjoy a biryani without meat? The answer is-- Well, you can..! And for that, all you just need is to come out of this mind block and enjoy this.


HOW TO MAKE VEG BIRYANI

 INGREDIENTS 
  1. 1 cup soya chunks
  2. 300 gm basmati rice
  3. 1 chopped potato
  4. 2 chopped onions
  5. 2 chopped green chillies
  6. 1 chopped carrot
  7. few chopped beans
  8. 1/2 chopped capsicum
  9. few drops of lemon
  10. 1/2 tsp Haldi powder
  11. 1 tsp red chilli powder
  12. 2 tsp biryani masala
  13. few coriander leaves
  14. 1tsp Kasuri methi
  15. 1 chopped onion
  16. 1 chopped tomatoes
  17. 1 tsp salt
  18. 1/4 cup curd
  19. 3 tbsp oil
  20. 1-litre water
  21. 1 tbsp salt
  22. 1 tsp jeera
  23. 1 cinnamon
  24. 1 bay leaf
  25. 4-5 cardamom
  26. 6-7 black pepper
  27. 1 tsp salt
  28. 2 drops of kewra water

PROCESS OF MAKING VEG BIRYANI

STEP 1-: Take a bowl and add soya chunks and water, then leave it for 15-20 mins. After 15-20 mins drain out water from those chunks.

STEP 2-:  In another bowl, add rice and water, then leave it for 15-20 mins.
 
STEP 3-: Marinate soya chunks,1 chopped potato, 2 chopped onions, 2 chopped green chillies, 1 chopped carrot, few chopped beans, 1/2 chopped capsicum, few drops of lemon, 1/2 tsp Haldi powder, 1 tsp chilli powder, 2 tsp biryani masala, few coriander leaves, 1 tsp Kasuri methi, 1/4 cup curd. Give it a proper mix.

STEP 4-: Take a pan on a medium flame add 3tbsp oil,1 chopped onion. Ster it till becomes brown.

STEP 5-: In a bowl add 1-litre water, 1 tbsp salt, rice and boil it on a medium gas flame. After the boiling process, strain all the rice and give it some time to cool down.

NOTE-: Stir it only once. Do not stir it again and again otherwise, it will break. Stir it after boiling the rice.

STEP 6-: Now, add brown onions to that marination mixture.


STEP 7-:  In a pan at medium gas flame add that onion oil,1stp jeera,1 cinnamon,1bay leaf,4-5 cardamom, 6-7 black pepper,1 tsp salt, 1 chopped onion, few drops of kewra water,1 chopped tomatoes. Then add marinate mixture into it and stir it for 2-3 mins. Keep a dish on that pan and keep it for 5-7 mins. After that add strained rice into it and mix it. Add 3/4 cup of water. Then add the next layer of rice

STEP 8-: Keep a dish on it. Cook it on the lowest gas flame for 10-12 mins.

STEP 9-: Present it on a plate and add some cashews on top of it.

 
STEP 10-: Finally, Our meal is ready to be enjoyed!
